Food-safe sanitisers are chemical products (commonly chlorine-based, quaternary ammonium, or peracetic acid) formulated and approved to reduce microorganisms on surfaces that touch food, without leaving residues that would contaminate the food. They must be applied at the manufacturer's specified concentration and contact time, and in many cases require a potable water rinse or air-drying step in line with local food safety regulations.
Using an unsuitable disinfectant on food-contact surfaces can leave chemical residues that end up in food, while under-strength sanitiser fails to reduce microbial risk. A properly selected food-safe sanitiser protects both microbiological and chemical food safety.
